Just for Fun recipes...

Melted Marshmallow treats - that kids and older kids will love!
What you will need: Tee light candle, matches, marshmallows, kebab stick, chocolate coated biscuits.  (You can make your own or buy.)
Method: Light candle, stick the marshmallow onto the end of the kebab stick and twirl slowly over the heat of the candle flame until golden brown and puffy.  Remove from heat and sandwich between two chocolate biscuits (Chocolate sides facing inwards.),  Enjoy!   
Alternatives: Use a real camp fire outside!

Cupcakes decorated with Cream Cheese Icing

Makes enough for 24 cup cakes. 
Ingredients:
200g Full fat cream cheese (at room temperature)
100g soft unsalted butter or marg
600g sieved icing sugar
Method:
1. Put all ingredients into a mixing bowl and mix together until light and fluffy.  Add flavour of your choice. e.g. Vanilla, cinnamon (add 1 teaspoon), strawberry (add one table spoon of strawberry jam), orange - add the grated zest of one orange.  Lemon, add the grated zest of one lemon.

Basic Cupcake recipe:
200g soft butter or marg, 200g caster sugar, 200g self raising flour, 4 eggs,
Method
1.pre-heat oven to 180 degrees, gas 4
2. Cream butter and marg together until fluffy
3.  Beat the eggs and slowly add to the mixture.
4. Gently fold the flour into the mixture
5.  Divide mixture between muffin cases. 
6.  Bake for 15-20 minutes until they are golden brown and spring back to the touch.
